Slow Cooker Cream Cheese Chicken Chili

I haven’t made a food post in a while, and honestly it’s just because I haven’t cooked in a while. We’ve  been traveling a lot these last few weeks and I have just been too tired! 

On the plus side, being tired means I break out the Crock Pot for some hands-off cooking. I haven’t used it in so long and really forgot how much I love it! My sister and mom got me a Crock Pot Cook Book for Christmas knowing I love to use it. I got this recipe from Pinterest.  

I got up 10 minutes early today to throw the ingredients in the Crock Pot, turned it on Low, and let it slow cook this delicious meal for us. SO easy. And it was SO GOOD! Jake literally ate all of it but my one bowl full. 

Ingredients: (If you’re feeding a family of 4, I’d double this recipe!)
  • 2 chicken breasts (frozen is fine)
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15.25 oz) can corn, undrained
  • 1 (14 oz) can diced tomatoes (I used RoTel because it has a bit more flavor)
  • 1 packet of Hidden Valley Ranch Dressing mix
  • 1 teaspoon Cumin
  • 1 tablespoon Chili Powder
  • 1 (8 oz) package cream cheese

  1. Place chicken on the bottom of the cooker, then cover with the canned vegetables. 
  2. Top with seasonings and ranch mix. Stir ingredients together. 
  3. Place the cream cheese on top. (I cut the cream cheese into 4 chunks to have it melt more evenly)
  4. Cover with lid and cook on low for 6 to 8 hours.
  5. Use 2 forks to shred chicken. 
  6. Stir cream cheese into chili. Cook for an additional 15-30 minutes.
Serve and enjoy!

  • Fun fact day about my wonderful husband: Jake has this uncanny ability to make me smile and laugh even when I’m sick. I was in bed all weekend but somehow he managed to still make me feel better. 
He is the king of puns and loves to make corny jokes. I’m talking real bad dad jokes. But I think they’re hilarious, and his enthusiasm and the fact that HE finds them so funny is the best part.

It’s the little things like this that showed me he was my perfect person. That and he told me he was going to marry me after 3 weeks of dating 😂🤷🏻‍♀️ which also made my laugh at the time but 9 months later he was down on one knee! 
That was also the same day I tried to break up with him because I had just gotten out of a bad relationship and I was starting to like him way too much too soon. I told him I wasn’t ready for another relationship and he literally said “are you trying to break up with me? We’re gonna get married.” I busted out laughing but he was so serious.
Even then, I could tell he really believed that. Now 4 months into our marriage he still shows me every day he wants to be married to me ❤️👰🏻🤵🏻 We have to appreciate the little things like the bad jokes because the effort behind them is how people say “I love you” in other ways.
